It all began with a leap of faith for Matt. After leaving his full-time job to explore something more creative and hands-on, he stumbled into the world of bread-making. “I started making bread as a way to save money. Turns out it’s also fun,” he recalls with a grin. And what better way to express creativity than through the comforting aroma of freshly baked bread?
When you step into Canadian Bakin, the first thing you’ll notice is the inviting aroma that wraps around you like a warm hug. Specializing in hand-rolled bagels and artisan breads, each loaf and roll is crafted with love and care. Matt has his personal favorite when it comes to bread. “My favorite is baguettes. Usually, the fewer ingredients, the more I enjoy it—baguettes and sourdough loaves top my list!”
Matt’s enthusiasm doesn’t stop at basic ingredients—he’s on a quest for specialty flours, which he finds particularly fascinating despite their elusiveness in town. “Fresh rye, einkorn, flours like those—it’s become a recent interest of mine,” he explains. It’s clear that this passion for high-quality ingredients shines through in every bite of their handmade delights!
One of the magical things about bread-making is its ability to bring people together. “It really does bring people together in several ways,” Matt shares. “Eating, of course, but also working with others to make it. It’s a time-intensive endeavor, so you really get to know the people you’re working with.” It’s a labor of love that creates not just delicious products but cherished connections!
Teaching others plays a crucial role in Matt’s life as a baker. He enjoys sharing the skills he’s perfected over the years. “For me, it’s teaching people how to troubleshoot bread dough by feel. It’s a very hands-on skill—you have to do it a lot to be good at it,” he says, highlighting the learning curve that comes with this craft.
When asked about his typical day at the bakery, Matt can’t help but chuckle. “Well, if I’m working a shift at the shop, you’ll find me huddled over a trash can in the dish pit shoving bread into my face like a rat,” he jokes. So, while craftsmanship is serious business, there’s always room for a bit of fun along the way!
