A Madison County couple is set to bring a popular breakfast-brunch-lunch concept restaurant to Huntsville this spring. Raymond and Kamara Fields will open a new location of Eggs Up Grill at 1307 Four Mile Post Rd. The franchise already has a presence in Madison on Hughes Road.
The restaurant, with a spacious 3,066-square-foot area, will offer indoor seating for 130 and outdoor seating for 40. Operating seven days a week from 6 a.m. to 2 p.m., Eggs Up Grill in Huntsville aims to provide dine-in, online ordering, takeout, catering, and delivery services to its customers.
Eggs Up Grill is known for its varied menu featuring favorites like corned beef hash with potatoes, onions, and special spices, made-to-order omelets, buttery grilled blueberry muffins, and an assortment of lunch options including burgers, melts, salads, and more. The franchise has established locations across several states, delighting customers with their classic dishes.
Raymond Fields, a retired U.S. Army Sergeant Major with 28 years of service who previously worked at Redstone Arsenal, will manage the new location alongside Kamara. Kamara brings 20 years of finance experience to the table, having worked in business development and wealth advisement. The Fields have been part of the Huntsville community for the past 15 years.

The new Eggs Up Grill location is currently accepting applications on their website for interested individuals looking to be part of the restaurant’s team. An official opening date for the Huntsville site is yet to be announced, but customers can expect the same quality and hospitality that Eggs Up Grill is known for.
